Homemade Crockpot Chicken Rice Soup —- similar to my mom’s recipe

Whenever I was sick growing up, my mom used to make me chicken rice soup. I have never attempted to make it until today. My mom used to make it in a huge pot, but since I only have a crockpot I wanted to make it in there. I’m proud to say it came out exactly how I remember my mom’s soup. I believe she may have been helping me from Heaven. She had to be because I’m not really a good cook. I have definitely gotten better since my daughter was born, but I still mess up a lot. Practice makes perfect right?

Ingredients:

3 Chicken cutlets

1 cup of rice (white or brown)

1 small onion

½ bag of baby carrots, chopped

3 celery stalks, chopped

3 tsp of salt

Dash of pepper for taste

1 tsp thyme

½ tsp fresh rosemary leaves (1 stalk)

1 fresh sage leaves, chopped

2 tbsp butter

6 cups of chicken broth

3 cups of water

Instructions

  1. Place all ingredients into crockpot like the picture below.
  2. Cook for 4 hours on low.
  3. When the soup has been cooking for 2 hours, remove chicken and shred in into small chunks. Put chicken back in and let it cook for the remainder of the time.
  4. Stir before serving.

***If you don’t like soft rice add the rice after 2 hours before or after shredding the chicken.***
